Fruity Chicken Jeanette March 19, 2015 Recipes This has turned out to be my go-to chicken dish, with the new food-sensitive eating plan. It's simple and easily adaptable. I generally serve it with 2 sides including corn on the cob, black beans, baked sweet potato, fresh cucumbers. I try to balance so that I'm serving at least one fresh side dish. Ingredients 2 chicken breasts 1 D'anjou pear (or any other pear you have on hand) 2 plums (use 2 different colors for a more attractive dish) 3 pieces of celery Almond oil Instructions Preheat over to 425 for a glass dish (450 for metal). Coat the bottom of a 9x13 pan with oil. (Use it sparingly.) Brown the chick in a skillet, just to lock in the juices. Thickly slice celery and fruit. Arrange the chicken in the pan and surround with the fruit. I try to put a few plum slices on top of each chicken breast for more color. Bake, covered, for 30 minutes. Notes If you're missing any of the ingredients, try any other fruit you have on hand. Pears and plums bake easily and don't fall apart too much, so they are ideal. The leftover fruit sauces pairs well with salmon.
