Gluten-Free Dairy-Free Chex Mix Jeanette November 20, 2014 Recipes Chex mix is always a holiday favorite. But what happens when you need to adjust the recipe to accommodate your healthier eating plan? Here's how I modified it for gluten-free eating. Gluten-Free Dairy-Free Chex Mix 2015-04-24 02:08:28 Serves 24 Always a family snacking favorite. And you really can't tell the difference - except for the missing Wheat Chex, which was never anyone's favorite. Ingredients 4 1/2 cups Corn Chex 4 1/2 cups Rice Chex 1 cup mixed nuts 1 cup gluten free pretzels (Snyder's minis are the best!) 6 T Earth Balance margarine (it's dairy-free) 2 T Worcestershire sauce 1 1/2 t seasoned salt 3/4 t garlic powder 1/2 t onion powder Instructions Slice the margarine into 10-12 pieces and melt in the microwave in a 9x13 glass pan. (about 90 seconds) Add the Worcestershire sauce, salt, and garlic and onion powers to the butter, then stir. Add the cereal, a cup at a time, alternating between the two types of Chex. Add the nuts and pretzels. Microwave on high for 2 minutes, then stir. Microwave again for 2 minutes, then stir. Microwave third time for 2 minutes. If there is any left, store in airtight container. Notes I've tried the microwave and the oven methods. Not only is the microwave faster, but the result is crispier and better mixed. I mix everything in the glass pan so there's nothing extra to wash. Some family members don't like nuts so I generally make one batch with and another without. If you use the same pan for two batches, be sure to let it cool, then wash thoroughly. Otherwise, the second batch is not as good.
