If you have food sensitivities, then you understand how difficult it is to use off-the-shelf ingredients. Of course so many recipes call for Italian dressing as one of their ingredients, so I HAD to find something I could eat. This is my solution.

I like to serve grilled chicken with black beans and corn on the cob. For the “sour cream” topping for the black beans, I use Sheep’s Milk yogurt (it’s non-dairy!). When I eat out, I even take a small container of my “sour cream” to add to the dishes.

This tastes almost like the bottled dressing in stores. Great for marinades!

Ingredients
  1. 3/4 cup oil - I use canola or almond oil. Use whatever type you can eat
  2. 1/3 cup red wine vinegar
  3. 2 T water
  4. 1 t minced garlic
  5. 1 1/2 t salt
  6. 1/4 t pepper
  7. 2 t sugar (or Stevia, depending on what you can eat)
Instructions
  1. Combine all ingredients.
  2. Store in a jar in the refrigerator, using what you need.
Notes
  1. I generally marinate my chicken in this dressing before grilling it. Adds that extra zest!
  2. Don't let the calorie count scare you. That's for the whole recipe! And remember, when you marinate the chicken, you're throwing away most of the dressing any way.
